I notice that in the Grey Warden Lore it said that they "discover the joining". But how, did someone or something showed them this "discovery".

I guess it's like cow milking... you'll never know... :-D To be serious, I think maybe some prisoners escaped from the deep roads, aft4er they were forced to drink darkspawn blood. And instead of becoming broodmothers, they became immune.
