Behemoths are actually Red Templars whose overexposure to red lyrium has completely consumed their bodies. They are barely recognizable as having once been human, and exist in constant agony; they are little more than living siege engines.
If the Templars are recruited into the Inquisition...
The Inquisition first encounters Behemoths at Therinfal Redoubt, fighting the uncorrupted Templars alongside the other Red Templars in the latter's attempt to purge Therinfal Redoubt.
If the Mages are recruited into the Inquisition...
The first Behemoth which the Inquisition encounters appears during the battle of Haven. A fully-corrupted Knight-Captain Denam leads the final wave of Red Templars against the Inquisitor to prevent the firing of the trebuchet to bury Haven.
After this, Behemoths are deployed more frequently, joining Red Templar patrols throughout Orlais and Ferelden.
Behemoths have very high armor and health, as well as the ability to generate Guard, making them very durable. They are also capable of sowing red lyrium into the soil, causing it to burst out of the ground when they strike it, creating a barricade of red lyrium to trap their prey.
